
People who go on diets are not being healthy. People who are healthy don’t need to go on diets.
I made the mistake of going on all these different diets, but I learned from those mistakes. When I first started learning about bad gut flora I started reading up on parasites and how eating meat supposedly gives you the six letter “C” word.
I became vegan under the presumption that it would alkalize and cleanse my body. (Good reasons to go vegan.) I specifically did raw vegan under the notion that cooking food destroys enzymes and makes it harder to digest. All good and valid reasons.
Later on, I went to the opposite side of the spectrum and tried the carnivore diet. I watched the carnivore community attack vegans in a similar way telling them that plants are toxic and contain all sorts of plant anti-nutrients like lectins, oxalates, phytic acid, etc.
As I observed both sides and continued my studies, I realized why all the confusion, attacks and ignorance when it comes to food.
As a beer brewer, I knew about phytic acid, because when brewing beer, we soak grains in water to remove things like phytic acid. This was my advantage. I understood fermentation and how probiotics digest food.
This is where I started to learn about food preparation methods. Raw isn’t always better. You have to learn to soak, sprout, ferment, cure or smoke foods.
A tomato for example has lectins. Lectins are considered anti-nutrients because they bind to minerals. It would undo your hydration efforts to get minerals into your body. So, it’s true that it can be toxic if you eat it raw. You can, however, cook a tomato to remove lectins and access the nutrients. When you see “fire roasted” tomato salsa, that’s a traditional preparation method because people knew that fire roasting a tomato removes lectins.
Another way to get rid of lectins is through fermentation. When you ferment tomatoes, you make real ketchup. Lacto-fermentation is the traditional way to make ketchup with vitamins, unlike the modern-day version made with vinegar and sugar.
In the carnivore community, there’s also similar misconceptions like eating raw meats. There are some meats that are indeed powerful when you eat them raw, but not all meats should be consumed raw and here's why.
Liver is easy to digest so I can see the benefits of eating raw liver, but muscle meat like a brisket is hard to digest. If you eat raw meat that's hard to digest, you'll likely end up with indigestion and parasites.
I wouldn't recommend eating raw muscle meat... There's a better way...
When brewing beer, we would soak grains at around 130 °F to break down the grain’s protein into amino acids. We called this the protein rest because protein digestive enzymes become most active at this temperature range.
If you’ve ever been to a BBQ place and talk to the pit masters, you will learn that they smoke their meats at around 130 °F for 16 to 24 hours. Smoking meat at this temperature doesn’t destroy enzymes, it activates enzymes which pre-digests the meat and that’s why it is tender and easy to digest.
So, the idea that cooking food is bad because it kills enzymes isn’t accurate. Neither is eating raw foods, or being vegan, carnivore or any of that.
Food preparation methods like soaking, sprouting, fermenting, smoking, curing, etc., require you to understand enzymes. Enzymes come from probiotics.
The key to endless energy and hormone production is in probiotics. Temperature is part of creating an environment for probiotics to become active, strong and healthy.
That's why body temperature matters. People with hypothyroidism often have low body temperature (think cold hands and feet). This is not an ideal environment for probiotics to produce hormones.
Knowing that, you can start to see why the key to producing thyroid hormone is in probiotics. I can't believe how many people still say that low thyroid is just an iodine deficiency.
Worse, some people think that iodized salt is good for low thyroid, but is it really?
